Ingredients for Making Curd Snails

  1. Cottage cheese (any fat content) 360 grams
  2. Egg yolks 4 pieces
  3. Soda 0.5 teaspoon
  4. Premium wheat flour 1 cup
  5. Sugar 4 tbsp. spoons
  6. Raisins 100 grams
  7. Icing sugar 100 grams

Cooking curd snails:

Step 1: knead the dough.

Curd dough for this type of baking should not be too sweet. Therefore, put three quarters of the cottage cheese in a bowl, add 1-2 tablespoons of sugar and rub it thoroughly with a spoon. Add the yolks to the curd mass and rub again and pour the baking soda. You do not need to extinguish soda, since the cottage cheese is acidic enough to extinguish it yourself. Mix and leave for 3-5 minutes, after which we pour flour in small portions, stirring with a spoon until it is possible. Next, knead the dough with your hands, adding flour to the board. Flour can go more than indicated in the recipe, it depends on the fat content of the cottage cheese, but still do not get too carried away. The dough should be soft. We roll it into a ball and put it in the refrigerator for 1.5 hours.

Step 2: Prepare the filling for the snails.

The remaining cottage cheese is ground with sugar in a separate cup, if dry cottage cheese, you can add a spoonful of sour cream or milk. Let it stand for 10 minutes to dissolve the sugar. In the meantime, wash the raisins and pour boiling water over it. When the raisins swell, add it to the curd.

Step 3: form the curd snails.

We take out the cooled dough from the refrigerator and roll out a rolling pin into a layer 3-5 mm thick. We lubricate the half of the layer with the filling, carefully distributing it with a spoon, since the curd dough is very tender and easily breaks. Cover the filling with the second empty half of the dough and roll it into a roll.

Step 4: bake the snails.

Turn on the oven and heat it to 220-230 degrees. While the oven is heating, cover the baking sheet with foil. From the previously prepared roll, cut pieces 1 cm thick and lay them on a baking sheet at a distance of 2-3 centimeters from each other. We put the snails in the oven and bake for 20-25 minutes.

Step 5: serve to the table.

We take out the ready-made curd snails from the oven and remove from the baking sheet and allow the cakes to cool for 5-10 minutes. Sprinkle with powdered sugar to sprinkle evenly through a sieve, and serve. Curd snails can be served both hot and cold, for tea, coffee or with compote. Enjoy your meal!

Recipe Tips:

- - If there is no time to wait for the dough to cool, you can cook curd snails and without cooling it will not affect the taste, but rolling the dough will be a little more difficult, it can stick to the rolling pin.

- - if desired, cocoa powder, cinnamon or candied fruit can be added to the filling.

- - when slicing cottage cheese snails, moisten the knife with cold water or milk before baking, so the cottage cheese will not stick to the knife and the pieces will be the same.
