Making chocolate fondant with whipped cream:

Step 1: Melt the chocolate in a water bath.

The pan must be filled with water, evenly to half, set to medium heat, place a bowl of a suitable size on top. And put chocolate in it, previously broken into small pieces, so that it melts faster. At the same time, you don’t need to stir the chocolate at all, it will not burn, and so just wait until it melts completely.

Step 2: Prepare the dough for the fondant.

In a deep bowl, combine egg yolks, eggs, along with granulated sugar and sea salt. Stir all the contents of the bowl well, and then begin to beat with a mixer or blender. until salt and sugar are completely dissolved. After the mass rises significantly, add starch to it, gradually pouring it, do not stop whipping. When the dough for the fondant gains a thick consistency, pour melted and still warm chocolate into it and stir well.

Step 3: Bake the fondants in the oven.

Preheat the oven up to 200 degrees. Lubricate the ceramic baking tins liberally with a piece of butter, then fill them with dough. I advise you to do this with a tablespoon. It’s not necessary to fill the molds completely., since in the process of baking it still rises, and otherwise we will get not quite even and beautiful fondants. Send the forms to the preheated oven, for about 10-12 minutes. When the fondants are browned, remove them from the oven, but do not rush out of the molds, let them cool down first.

Step 4: Make the whipped cream.

While our dessert cools in molds, prepare the cream. Beat them with a mixer. at low power in a strong foamso as not to turn cream into butter. Therefore, be very careful and stop the whipping process during.

Step 5: Serve the chocolate fondant.

- - There is a finished product in stores called "whipped cream", they are usually sold in bottles. But this product is not suitable for our fondants. Firstly, they are not saturated in taste and often settle quickly. When you take this step yourself, you will perfectly feel the difference in taste, texture and aroma of whipped cream.
