Cooking pancakes with raisins:

Step 1: prepare the flour.

Take a sieve and sift the flour through it into a bowl. Thanks to this process, we not only remove lumps from the flour, but also enrich it with oxygen from the air. Flour for the preparation of dough for fritters is better to take the highest grade and fine grinding, as well as trusted brands.

Step 2: prepare the egg-sugar mixture.

We take the eggs and use the kitchen knife to break their shell over the bowl, thereby pouring the whites and yolks into this bowl. Then we add salt to the ingredient and with a hand whisk or fork, beat everything well. Pour half a serving of sugar in a bowl of beaten eggs. We leave the second half of the sugar ingredient to dissolve it in yeast, since they really like the sweet environment and the fermentation process will accelerate, so the dough will be more magnificent. But this is later, but for now everything is well beaten to a homogeneous mass and left in the container.

Step 3: prepare the raisins.

We put the raisins into a glass and pour it with boiling water for 5-7 minutes. Then pour the water with raisins from a glass into a sieve and let the water drain. After we shift it onto a paper towel and dry it. In order for the raisin berries not to stick together, and to be distributed evenly in the dough, transfer them to a bowl with a small amount of flour and roll the ingredient in it. Attention: for the preparation of the test, it is better to take seedless raisins.

Step 4: prepare the butter.

Melt the butter ingredient in a small bowl. To do this, put a saucepan with a piece of oil on low heat and constantly stir it in a container to speed up the process. After we turn off the burner and set aside the melted butter to the side, cool to room temperature. Butter should not be hot when we mix it with other ingredients to make the dough.

Step 5: prepare the dough for fritters with raisins.

For pancakes, we prepare yeast dough without dough, that is, such a dough is kneaded immediately in one go. We transfer fresh pressed yeast into a container with warm water (35-37 degrees) and stir with a tablespoon until they are completely dissolved in water. Attention: yeast should not be dissolved in boiling water, otherwise they will deteriorate. When our ingredient has completely dissolved, add the second half of sugar in a bowl to it and mix everything with a tablespoon. Then gradually in small portions using the same tableware, add flour to a bowl with our liquid mass. In this case, do not forget again to mix everything well with a tablespoon so that lumps do not appear in the test. Now add the warm melted butter and raisins from the plate to the bowl with all the ingredients. Last of all, we introduce the egg-sugar mixture into the dough. This time you need to mix very carefully and thoroughly. The test ingredient is homogeneous, without lumps and medium consistency: you do not need to knead it manually, although it turns out to be thick. Cover the bowl with the dough with a clean cloth towel or wrap it with cling film and set aside in a warm place for 60 minutes. At this time, fermentation occurs, as a result of which the yeast begins to produce carbon dioxide, which will make our dough loose. The dough is increasing 3-4 times.

Step 5: Cooking Raisin Pancakes

Pour a little vegetable oil into the pan and put on medium heat. Spread the dough when the oil in the tank is well warmed up. After that we can slightly reduce the fire. Soaked in a tablespoon of water, take the dough from a bowl and put it in a hot pan with butter. The fritters are frying rather quickly, about 3 minutes on each side. When the pancakes acquire a golden brown on one side, use a kitchen spatula to turn them over to the other side and fry them on the other side until golden brown. Then, holding the pan with a tack, with the same spatula we transfer the pancakes with raisins to a wide dish. It’s important to wet a tablespoon each time with water, before we transfer the dough into a pan for cooking fritters. The dough in a bowl can not be mixed with a tablespoon before we put it in a bowl.

Step 6: serve pancakes with raisins.

Serve pancakes with raisins immediately after cooking. On the table for our magnificent, tasty and beautiful dish we will put sour cream, cream or honey, and you can also add fresh berries, chopped banana or apple to the dish.
