Preparation of zrash from potatoes with cucumbers:

Step 1: prepare the filling.

We spread the pickles on a cutting board and use a knife to cut the ingredient into small squares. Chopped cucumbers spread in a medium bowl. Now well wash the parsley and dill under running water. Then, shaking the components off the water, put them on a cutting board. Using a knife, finely chop the greens and transfer it to a bowl with chopped cucumbers. We spread the processed cheese on a cutting board and, using sharp tools, cut the ingredient into small cubes in length and width no more than 5-6 millimeters. Attention: so that the cheese does not stick to the knife, from time to time we wet it under running cold water. We transfer the crushed component to the same container with other crushed ingredients. Using a tablespoon, mix well all the components of the filling until a homogeneous mass is formed.

Step 2: prepare the potatoes.

Using a knife, remove the peel from the potato and immediately after that wash the ingredient well under running water. Then, lay the peeled vegetable on a cutting board and cut it into small pieces. Put the chopped potatoes in a deep pan and fill the container with plain water so that it completely covers the potato slices. We put the pan on medium heat and wait for the water to begin to boil. Attention: surely, as the liquid in the pan begins to boil, remove the foam from the potato from its surface using a slotted spoon. Then, make a small fire and cook the ingredient under a slightly open lid for 35-40 minutes depending on the type of potato. When the potatoes are cooked, turn off the burner, and pour the liquid into the sink, holding the slightly open lid with the pan with kitchen tacks. Important: potato readiness can be checked with a fork. If the improvised equipment easily enter the vegetable, it means that it is ready and you can proceed to further preparation of the dish.

Step 3: prepare potato dough.

Using the pusher, knead the boiled potatoes to a puree state. After that, we break the egg shell with a knife and pour into the pan with a potato mass yolks and squirrels. We also salt and pepper the mass to taste and again everything is fine or beat with a napkin or mix everything with a tablespoon. Now the most crucial moment! Gradually pour flour into the container, but at the same time we continue to mix everything with improvised equipment. Attention: you may need a little more or less flour than indicated in the ingredients, since the potato mass should not stick to your hands. After that, put the potato dough container aside to cool to room temperature.

Step 4: we form zrazy of potatoes with cucumbers.

To start, so that the potato dough does not stick to your hands, grease them with water or a small amount of vegetable oil. Then, using a tablespoon, spread the dough on the palm of your hand. The amount of dough is measured "by eye" depending on what size you want to make zrazy. But it is also necessary to take into account the fact that inside the test we will lay out the filling, which, in the process of forming the zrazy, should not fall out and tear the dough. So, we level the test mixture in the palm with improvised inventory, forming a cake. After that, put a small amount of cucumber filling on the center of the tortilla. And to do it right away, just gently press the edges of the dough inward with the fingers of your hand, clenching your hand into a fist. Spread the finished product in a free plate and repeat the procedure with the remaining dough and filling. Now, pour a little breadcrumbs into a clean, dry plate, and pour a small amount of vegetable oil into the pan. We put the container on a small fire and, while our oil is warming up, we proceed to prepare the dish. In turn, roll the zrazy in breadcrumbs on all sides and after that, carefully place the “pie” in the pan with our hands. We fry the dish from all sides until a golden brown crust is formed. Approximate time for frying a “pie” on one side will take 2-3 minutes. Using a wooden spatula, we transfer the finished dish to a flat serving dish.

Step 5: serve potato zucchini zrazy.

Zrazy is a favorite dish of my family since childhood. Every weekend, I try to pamper my loved ones a little bit with fried potato cakes. I usually serve this ruddy dish to the table with sour cream or cream and fresh vegetables, and sprinkle additional herbs. Good appetite!

Recipe Tips:

- - Instead of breadcrumbs, you can also roll zrazy in flour.

- - For the filling, you can use both pickled and canned cucumbers.

- - In addition to fresh parsley and dill, you can add cilantro greens if desired. But this is for your taste, since I, for example, do not like the taste and smell of this plant.
