Step 1: prepare the butter.

When the dough begins to acquire a homogeneous mass without lumps and with a smooth surface, very quickly with clean, cool hands we form a ball from the dough, wrap it with cling film and put it in the refrigerator to brew for 30 minutes. Attention: hands should also be cool, therefore, before forming the dough, it is better to hold them under cold water, since excess heat can change the consistency of the dough, and it will turn out already non-layered.

Step 4: prepare the lazy puff pastry.


Sprinkle a small amount of flour on the surface of the kitchen table, take the chilled dough out of the refrigerator, free it from the film and lay it out on a flat surface. Now, using a rolling pin, we roll out the test ball into a rectangular cake the size of 45 centimeters by 15 centimeterstrying to form right angles.
Important: it is necessary to roll out only to one side from yourself and make sure that the dough does not stick to the rolling pin or to the table. If necessary, sprinkle it with flour. Then we place the test layer with the short side closer to us. Now wrap the upper hands 1/3 part test inside and after the bottom 1/3 part inward.

We should get a neat square. After that we turn the dough 90 ° clockwise so that the top seam on the test is on our left. Repeat the process of preparing lazy puff pastry first and so on 3 times. In between cooking, put the dough back in the refrigerator on 20 minutes. Everything, the dough is ready!
