Cake "Bear in the North"

The ingredients for the preparation of the cake "Bear in the North"

For the test:

  1. Butter (or baking margarine) 100 gr.
  2. Sugar 1 cup
  3. Flour (wheat) 2-3 cups
  4. Sour cream (any fat content) 1 cup
  5. 4 egg yolks
  6. 0.5 teaspoon slaked soda in vinegar
  7. Vanillin (to taste) to taste

For cream:

  1. Sugar 1 cup (maybe a little less)
  2. Egg whites 4 pcs.
  3. Nuts (walnuts, or peanuts) 1 cup

For chocolate fudge:

  1. Cocoa 2 tablespoons (or chocolate bar)
  2. Sugar 3/4 cup
  3. Milk 4 tablespoons
  4. Butter (or baking margarine) 70 gr.

Cooking cake "Bear in the North":

Step 1: Cook the dough.

Rub the softened butter, add 1 cup of sugar to it. Pour 5 yolks into this mass, and mix everything thoroughly. Then add a glass of sour cream and soda, slaked in vinegar. Mix everything again, and only then add half the flour and vanillin (optional). It should be a slightly liquid dough. Divide the dough into two parts, and add cocoa to one part. Now we distribute the remaining flour into two cakes and knead not very cool, but elastic dough. We do not add all the flour, as necessary, make sure that the dough is not tight.

Step 2: Cook the cakes.

So, we got two buns - one chocolate, the other simple. We divide each dough into three parts. Note that you can’t roll out the dough, so you have to use your hands to knead small cakes. We take a baking dish, grease it with a piece of butter and spread a cake in it, then dip our fingers in flour and knead, as if stretching the dough throughout the form. This is done easily. Then you need to make a few punctures with a fork over the entire surface. Now bake cakes one by one in the form in the oven at a temperature of 180 degrees. They are baked quickly, 7-8 minutes. Finished cakes will need to be trimmed, despite the fact that this must be done immediately, as soon as you remove them from the oven. Otherwise, when they cool, they will crumble.

Step 3: Prepare the cream.

Peel the nuts (I used both walnuts and peanuts), fry them in a pan and chop them using a blender. Beat egg whites in a thick foam. A blender or whisk will help us with this, gradually add sugar to them. At the very end, add crushed walnuts and peanuts to the protein cream, and mix gently.

Step 4: Cook the bear cake in the north.

Lubricate the baked cakes with the resulting cream. You need to fold the cake alternately, white cake, black cake, white, etc. Now you need to fill the whole cake with chocolate fondant. For its preparation, stir cocoa with sugar, pour hot milk, stir well and put on fire to make the mixture boil. So that the mixture does not burn, it must be constantly stirred. When the sugar has completely dissolved, remove the fudge from the heat, and put the butter in it, stirring until a homogeneous consistency. It remains to fill the cake with hot icing, cool a little at room temperature, and then put in the refrigerator for a couple of hours.

Step 5: Serve the Bear Bear Cake in the North.

So we have prepared a cake, which should turn out to be very soft, soaked and tender. Make aromatic coffee or tea and call the household to the table! Enjoy your meal!

Recipe Tips:

- - If you do not have a blender, nuts can be crushed using an ordinary rolling pin.

- - The baking dish can not be greased with butter or margarine, but simply covered with parchment paper.

- - You can decorate the cake at your discretion, you can, for example, sprinkle nuts on top.

- - In the cream, instead of cocoa, you can put boiled condensed milk.
