Peking Duck


Peking Duck Ingredients

Peking duck cooking:

Step 1: The first step in preparing the duck.

Boil the water in the kettle. The duck carcass must be specially prepared: hang it on a hook, pour boiling water over it, remove the skin, then excess fat. Dry the duck well with a paper towel. After that, rub it inside and out with wine, sea salt.

Step 2: The second stage of duck preparation.

The duck should be planted on a jar, placed in a large pot, which should not be covered, then in the refrigerator for 12 hours. After this time, we take the carcass out of the refrigerator and spread it in the same way (inside and outside), but not with wine, but with honey (2 tbsp. Tablespoons), then again we will send it to the refrigerator for 12 hours.

Step 3: The first stage of baking meat.

On a baking sheet you need to pour 1 cup of water (cold), install a wire rack on it, put the duck, which you need to cover with foil. Preheat the oven to 180 - 200 degrees (medium heat) and place our dish in it (bake for 1 hour).

Step 4: Cook the sauce.

While the duck is baking in the oven, prepare the sauce. Ground ginger root, black pepper and olive oil combine in one deep plate and stir. When the hour has passed, the duck must be removed from the oven and greased with this sauce. The liquid from the pan should be poured, and immediately washed, wiped with a towel to dryness.

Step 5: The second stage of baking.

Wrap the duck again in foil and place on a baking sheet with a wire rack in the oven for 25 - 30 minutes (reducing the fire). Mix the remaining honey and soy sauce. When the duck is ready, grease it with this mixture. Wash green onions and chop finely. Rinse cucumbers, sweet peppers and tomatoes, peel and cut into thin slices.

Step 6: Fry the pancakes.

Break the eggs and mix with 2/3 cup cold water and flour, beat with a whisk and add the onion. Pour oil on a hot frying pan, heat it a little and fry pancakes from this test (1 tbsp. L. = 1 pancake).

Step 7: Serve the Peking duck.

Put the meat (separated from the bones), sauce, vegetables and pancakes in the hotel plates. Peking duck will go with cognac, vodka or wine. The meat must be wrapped in pancake dipped in sauce and eat with vegetables. Good appetite!

Recipe Tips:

- - It is best to use a pair of ducks, and frozen will not get the same taste as fresh.

- - Cooked duck meat can not be separated from the bones, but simply cut into legs, wings and other parts.
